Turn on the display of file extensions in the Files app so you can view the extension(s) you wish to change by navigating to the view menu and selecting View Options > Show File Extensions
Tap and hold on the file / name you want to edit the extension for and select “Rename”, or on iPad Files app press the Return key after choosing the file to adjust its extension
Modify the file extension to whatever you prefer, just like renaming a file, but focusing specifically on the extension part (for instance changing text.txt to text.rtf or similar)
Confirm the change by agreeing to use the new file extension if prompted

Keep in mind that altering a file extension doesn't actually convert the file type—it only changes how the system identifies it. For example, if you rename a .doc file to have a .jpg extension, it won’t transform into an image file, but rather will try to open with an app associated with .jpg files, which likely won’t work properly.
The Files app on iOS and iPadOS isn't as feature-rich as Finder on MacOS, and although we can now change and view file extensions, batch editing of extensions isn't possible yet—though it may become available in future updates to iOS and iPadOS.
